発症機序を見極めることが治療の鍵となります。毒素型は輸液と対症療法が基本であり、侵入型で症状が重い場合は抗菌薬の投与が必要となります。

潜伏期間： 毒素型食中毒は食後1〜6時間ですぐに発症しますが、ウイルス性胃腸炎（ノロウイルスやロタウイルス）は24〜48時間の潜伏期間があります。
症状のパターン： 食中毒は激しい嘔吐や胃痙攣から始まることが多く、ウイルス性は筋肉痛、微熱、水様便が前面に出やすいです。
発生状況： 食中毒は同じ食事を共にした人に集中して発生し、ウイルス性は接触により同行者間で順次感染します。
